Weekend in Tai Po ( Part 3 )

To end up our day and kill time before dinner ,
We went snooker .

i got 2 red balls in ( 2 points scored ! )
Which was a good news to me --- A beginner with no
idea at all how to play and the rules .

My " coach " ( the guy in white shirt ) almost want to
whip me with the cue ... well ... because i am not a wise
student ~ Joking ~

Anyway , i have fun this weekend :-D

Weekend in Tai Po ( Part 2.3 )

Kadoorie farm is a good place to explore and visit during summer / leisure time .
It gave me an impression of the park in Quinta da Regaleira situated in Sintra .
Of course , not as magnificent as Regaleira , however it is impossible to explore
the whole area ( over 148 hectares of land ) by only one day .
You can rent a field there to plant your plants . you can do hiking there ,
you can join their workshops etc .

There are many other farms in Hong Kong which provided similar educational
activities . For example in Sai Kung , Fanling ,Sheung Shui etc .
Glad that we have places for us to get away from the hustle bustle city life .

Weekend in Tai Po ( Part 2.2 )

In this farm and botanic garden , you can see many different
species of animals , they are homed at KFBG during rehabilitation or,
when these animals cannot be released back into the wild .
Besides the above species , the botanic garden also keep frogs , bugs ,
moths , squirrels , birds etc .

It is a good place to educate children different kind of species and
how to protect the wild animals .

See ..... i kiss the boar .


Weekend in Tai Po ( Part 2.1 )

35'C summer afternoon at 12:30PM ... 6 gals + 2 guys ,

We're too excited knowing that we FINALLY arrived the
" Kadoorie Farm and Botanic Garden " .
Get ready ourselves to start the " adventures " .
We'll see the big fatty pigs , Bats , wild boars , frogs , crocodiles
Deers , farming fields , veggies etc ....


Creepy was only we guys in the farm but no others .....


Weekend in Tai Po ( Part 1. )

Hong Kong Railway Museum is an oper-air museum
located in the town center of Tai Po Market .
the exhibits include the historic station building,
six historical coaches, a narrow gauge steam locomotive and
a diesel electric engine No.51.

Free entrance and with Guided Tour service .
Some couples choose to take their wedding photos here
because of the vintage coaches and railways .
We saw 2 pairs yesterday .....

It is crazily hot yesterday , i am sweating only by standing
and waiting my co-workers .
i wonder how people can stay alive with wedding dresses ,
posing on the railways ....






Beetroot salad .

From " Wikipedia " :
Beetroots are rich in the nutrient betaine , which is important for
carduivascular health.Several preliminary studies on both rats and
humans have shown that betaine may protect against liver disease,
particularly the build up of fatty deposits in the liver caused by alcohol
abuse, protein deficiency, or diabetes, among other causes.

We used to cook beetroot soup however beetroot can also be used in salad .
So my salad have

Potatos -- 2 pcs
Apple -- 1 large one
Beetroot -- half clove
Lettuces -- for decorations .
Boiled eggs -- optional
Sour cream -- 3/4 cups
Mayonnaise -- 2 tbsp
salt / pepper -- a bit
Olive oil / vinegar -- a bit
Lemon juice -- a bit

Everything cut into small cubes and mix well with the seasoning .
Best for summer !
Doctors said ingestion of beetroot can colour urine red ,
The pinkness of pee depends on the acidity of your stomach ...
So far i didn't see my " pink pee " yet ...



i guess i have a strong stomach than ....

Summer lemon cream cheese muffins .

To clear all the cream cheese in my fridge ,
and to use my fresh summer lemons ,
This muffin can be served in cold or hot .

Ingredients :

Cream Cheese -- 190g
unsalted butter -- 30g
Sugar -- 60g ( can reducted to 40 -50g )
Lemon juice -- half pc of lemon
Grated lemon zest -- 1 pc of lemon
Slided lemon -- for decoration .
Beaten eggs -- 2 pcs
Self rising flour -- 120g

Methods :
- Preheat oven to 170ºC. Grate zest from lemon and juice lemon.
- Cut cream cheese and butter into small pieces, mix with sugar
to thoroughly coat cream cheese bits.
- Add in beaten eggs little by little till .
- Add in lemon zest and juice , keep blending .
- Add in shifted self rising flour , keep blending till throughly mixed .
- Spoon into muffin paper cups, filling about 2/3 full.
- Put the slided lemon on top , bake 20 - 25 minutes .
- Let cool and serve .


Personally i like the muffins to be served in cold .

Greece in the movies

As i remember, you told me before that you loved the movie: My big fat greek wedding, before. Well, there is a new movie in town with the same actress and it is set in Greece. This wonderful Greek descendant actress known as Nia Vardalos, may not be a Jessica Alba, nor a Sharon Stone, but she is gifted with an extraordinary sense of humor and with stunning writing skills.

When you can beat them, join them...
So i decided to do a gift list as well, although it's still very early for christmas but what the wheck, who cares??!!! I haven't been lucky this year or last year, so Santa could please make it up for me...



A pair of croc sandals: I've been longing for a pair of those ever since i came to HK for the first time and realize almost everyone had a pair...that was almost 5 years ago, it makes sense believing i was supposed to already had bought a pair, but NO...still haven't, not that i'm extremely poor but being unemployed makes me concious about saving...

A pair of military style flip-flops, i actually only thought about this gift some very few hours before, after someone very evil suggested me those...now i can't take them out of my head

A coaching book about Children Soccer coaching, i took a peek of this book upon my last staying in HK, at the Page one store in TST, i wanted so much to buy it because i felt it was going to help me tremendously with my career, but don't need to say more about what happened next :-(, and i haven't bought the book...

But, believe it or not, the gift i want most is my own Erica Lam...

however still can't find any lovely and vintage one .
And a coffee serving set which i said to myself i need one
since last year ...
Also want some baskets for all my earings , necklaces etc ,
those i can found in HK do not have lids OR been varnished
too bright ...

Am i too greedy having a long gift list ?!

All purposes couscous .

I like couscous its all purposes feature ,
you can add almost every kind of ingredients inside .
As salad , a side dish , lunch , dinner , desserts etc .
You can found over thousands recipes when you
search “ couscous “ on Goggle .


Last time Boss and I mixed couscous with the
“ Chinese salad veggies “ , surprisingly the taste was
fantastic . Sadly i forgot to take a photo for that
" masterpiece " .

Last night I made my couscous again . With some
left over I can found in the fridge … shrimps , carrots ,
tuna , raisins , pesto .
In a large bowl , mixed everything well with vinegar , olive oil ,
salt , pepper , pesto .

One small tip for making couscous is that like making oat flake .
Grab a bunch of couscous , spread them evenly in a box ,
pour hot water inside just right covered the surface of the couscous ,
Put back the lid and wait 2-3 minutes . Lett hem steam a bit by the heat .
Couscous will absorb all the water and become grainy and chewy .
